The Barbecue Smoker Science Of Food Preservation - And A Bit Of Fun Too!

While many of you will be traveling around the Bay Area for events, some may be more interested in staying close to home. There are numerous events taking palce throughout Sonoma County for SF Beer Week, check out your local watering hole and see if they have anything to offer. In addition to these events, Russian River Brewing will have Pliny the Younger on tap through the 17th.



So, what on earth do you do with all this raw meat? You cook it yourself, of course! Each table at Picnic Garden is outfitted with a grill and vent, and you choose the meats you want and throw them on the grill yourself. Servers will come around to your table and help you turn and cut your meat, but you can wave them off if you prefer to take care of things yourself. Just make sure you practice your chopstick skills before you come because there slow cooker pork belly is not a fork in sight at Picnic Garden. Also, the grills at Picnic Garden are on the small side, so if you have more than 4 people in your party, you'd be wise to split up and sit at two tables, or it will take forever to cook everyone's food. We were only two and we found the grill size perfect for our needs.

Food and cooking shows began showcasing bacon, as did chefs and fast-food chains. There are mail-order and online bacon companies, where different varieties are readily available to pursue bacon on a higher level (cob-pork belly gua bao, apple-cinnamon, 10-clove garlic and jalapeno, among many others).

Possibilities include tongue on rye with onions and spicy mustard; bone marrow and snails on toast, and salt cod with chorizo and black olive. Other offerings are a mouth-watering slow cooked belly of pork Cubano sandwich and a plentiful pulled pork with coleslaw slathered between grilled poppy-seed hard rolls from neighborhood bakery, Fleur de Lys. For the less adventurous, order the meatball Parmigiano hero; Italian cured meats with provolone picante and hot peppers, or the roast beef with crispy onions and horseradish.

In the Quick Fire Challenge, the chefs were tasked with using plantains to prepare two versions of fruituras (beach side fritters) for hostess, Padma and guest judge, famed Puerto Rican chef, Wilo Bennet. Stephanie mixed her plantain tortone with seared tuna for one variety and made a slow cooked pork belly and shrimp fritter with brown butter, basil, and lime for the other.

Recently, while shopping at the Oriental Supermarket at 5th and Washington St. in south Philly, I noticed that they were selling slabs of pork belly, and for only $1.50 - $2.50/lb.! I had no idea pork belly was so inexpensive. What's even better is that pork belly is really easy to make.

Fujian cuisine: In Fujian, there's a saying that's it's unacceptable if there is not soup at a meal. Thus, there's a big emphasis on broths and soups, as well as seafood dishes.
